TROPICAL CHEESECAKE DELIGHT

Ingredients

1 packet Tropical Paradise Dip & Dessert Mix
1 package (270 g) Golden Oreo Cookies
3 Tbsp. butter, melted
1 brick (250 g) cream cheese, softened
3 cups Cool Whip, divided
1 can (398 mL) crushed pineapple, well drained

Instructions

Preheat oven to 350°F. Place 22 Golden Oreo Cookies in a food processor. Pulse until it forms crumbs, add the melted butter and pulse again until the crumbs are covered in butter. Reserve 1/3 cup crumbs for topping. Press crumbs into an 8" baking pan or spring form pan lined with parchment paper. Bake in the oven for 7 minutes, take out, and let cool on the counter. While crust is cooling combine softened cream cheese with dessert mix. Mix until smooth. Fold in 2 cups Cool Whip, add 3/4 cup crushed
pineapple (reserve the remainder for topping). Mix well and spoon on top of the crust. Top with remaining Cool Whip and reserved pineapple and crumbs. Garnish with sliced strawberries or blueberries. Refrigerate for 2 hours or more before serving. This dessert is excellent prepared a day in advance.
